This is a deliciously yummy and healthy muffin mix, very adaptable, I sometimes add coconut or chopped nuts. Makes a big batch which you can store in the fridge and bake as needed. Great for those busy mornings. The microwave is not as yummy – but we used to do this as kids and then drizzle with syrup.
Beat 1 cup brown sugar & 2 eggs
Add ½ cup oil
Beat
Add 2 cups bran
2 ½ cups flour
2 cups milk
2 t bicarb
½ t salt
1 t vanilla essence
125 g dried fruit mix
Mix well.
Bake on 200 for 10 – 15 minutes or Microwave on high for 1 ½ – 2 minutes.
Store mixture in fridge.
