As it’s nearly my birthday, it seemed appropriate to share this yummy cake recipe! A few years ago I was given this recipe by a lovely friend of mine, Tracey. It sounds odd – but trust me – it’s delicious! (I added my tweaks in blue – tweak to your own taste!)
1 Cup White Sugar
1 Cup Brown Sugar
1 Tsp Vanilla Essence
125 grams Butter , Softened
½ Cup Plain , Unsweetened Yoghurt
250 grams Peeled & Grated Courgettes (or Seeded) Pumpkin / Carrots (I grate the courgettes on the really fine side of the grater – lighter that way)
250 grams Chocolate Bits / Chips (I just use 100g)
2½ Cups Flour
¼ Cup Cocoa
2 Tsp Baking Soda
1 Tsp Cinnamon (optional)
½ Tsp Mixed Spice (optional)
In a food processor or using a beater, mix together the eggs, sugars and vanilla.
Add the butter and yoghurt, blending until smooth.
Fold in the courgettes and chocolate bits and combined dry ingredients.
Mix gently to combine.
Spread into a greased 26 cm ( 10” ) baking tin and bake at 180°C for about 50 –60 minutes. (I bake mine for anything between 10 – 20 minutes longer – I think it depends on the courgettes)
Allow to cool before turning out. Can be iced – but delicious without.
